Chili Wontons Inspired by Memories at Din Tai Fung

Ingredients
- 1 cup ground pork
- 3 garlic cloves, grated
- 2 tsp fresh ginger, grated
- 2 tsp soy sauce
- 1 tsp roasted sesame oil
- 1 tsp Shaoxing wine
- 1 tsp fish sauce
- 1/4 tsp ground white pepper
- 1 tsp Chinese chicken stock powder
- 1 tsp cornstarch
- 20 frozen uncooked peeled and deveined mini shrimp
- 20 wonton wrappers
- 3 tbsp chili oil
Steps
Make the Filling.
In a bowl, mix:
- 2 tsp fresh ginger, grated
- 1 cup ground pork
- 3 garlic cloves, grated
- 1 tsp soy sauce
- 1 tsp roasted sesame oil
- 1 tsp Shaoxing wine
- 1 tsp fish sauce
- 1/4 tsp ground white pepper
- 1 tsp Chinese chicken stock powder
- 1 tsp cornstarch
Assemble the Wontons.
Put a teaspoon of filling in the center of each wonton wrapper. Press in a whole mini shrimp into each pork filling. Line the edges with water, and fold in half. Then, pinch the corners together using water as the adhesive, as shown in the video.
Steam wontons.
Steam for about 8-10 minutes until cooked through.
Serve.
Serve hot with chili oil drizzled over.
