Preheat the clay pot.

Slowly heat up a clay pot from low to medium-high heat over the course of 5 minutes.

Prepare the egg mixture.

While the pot warms up, whisk together the eggs. Add the bone broth and kosher salt to the eggs. Mix well, then strain to ensure a smooth mixture.

The pot should be nicely warmed up by now. Thinly coat the bottom of the pot with avocado oil and roasted sesame oil. Pour in the egg-broth mixture. Cook on medium-high heat. After about 3 minutes, you should see some small bubbles simmering around the edges. When that happens, turn down the heat to medium-low and cover the pot for another 3 minutes. Turn off the heat, and let the egg sit for another 5 minutes to cool off a bit before serving.
