Egg Bites Inspired by Memories at Dunkin' Donuts

Ingredients
- 3 eggs
- 2 tbsp cottage cheese
- 1 bacon slice, cut into bits
- 2 tbsp shredded Monterey Jack cheese
- 2 tbsp shredded cheddar cheese
- 1 tbsp green bell pepper, diced
- 1 tbsp spinach, chopped
- non-stick cooking spray
Steps
Preheat the oven.
Preheat that oven to 350°F (175°C) and place the oven rack in the middle position.
Prepare the egg mixture.
In a bowl, whisk until smooth:
- 3 eggs
- 2 tbsp cottage cheese
Then stir in:
- 1 bacon slice, cut into bits
- 2 tbsp shredded Monterey Jack cheese
- 2 tbsp shredded cheddar cheese
- 1 tbsp green bell pepper, diced
- 1 tbsp spinach, chopped
Grab a donut-shaped tin or muffin tin, and give it a spray with the non-stick cooking spray. Evenly distribute the egg mixture into the tin molds.
Bake, cool, serve.
Slide them into the oven for 15 mins, until they look a bit puffed up.
Let them cool down a bit before easing them out of the molds. Enjoy while it's warm.
