Prepare the Chicken.

Butterflying the chicken breast, and cut it in half. To do this, place the chicken breast on a cutting board, and carefully slice it horizontally, almost all the way through but leaving it attached on one side. Open it up like a book. This will give you two thinner pieces, still attached at one edge. Then, fully separate these pieces by cutting through the attached edge to create two individual thin pieces.

Marinade the chicken.

Marinade chicken breast for at least 45 minutes in:

Cook the chicken.

Pat the breasts dry.

Heat up your cast iron skillet over medium-high heat for 1 minute, then add 1 tbsp of avocado oil. Turn the heat to medium, and grill the chicken for 3 minutes per side until the chicken is no longer pink in the middle and registers 165 Fahrenheit.

While the grill is still hot, toast:

  • 2 English muffins

Cook the Egg Whites.

In a separate skillet, heat avocado oil on medium heat, and cook the egg whites. 2 egg whites per sandwich.

Assemble the Sandwich.

Place a grilled chicken and cooked egg whites on each muffin half. Add a slice of cheddar cheese to each sandwich.

Top with the other half of the muffin and serve hot.
